Christmas is around the corner which means there’s no better time of year to show off your catches of the season. To make the most of the delicious fish you’ve caught, we have picked three of our favourite festive recipes which are bound to impress any family member.

Smoked Salmon and Avocado Canapes

Smoked Salmon and Avocado Canapes

For a light starter before your heavy main why not make these smoked salmon and avocado canapes? These light bites are a great way to prepare your freshly caught salmon and they look good too!

Ingredients List

  • 500 grams of smoked salmon
  • 6 slices of rye bread
  • 3 avocados
  • 1 red onion
  • Pepper
  • 1 tablespoon of extra-virgin olive oil
  • A handful of fresh dill
  • 1 teaspoon of lemon juice

Method

  • 1.Using a circular biscuit cutter, cut the rye bread into small circles.
  • 2.Remove the avocado peel, cut it into thin pieces and put it in the blender. Add half an onion, a pinch of pepper, a teaspoon of extra virgin olive oil and the lemon juice and blend until creamy.
  • 3.Spread the avocado cream on the rye bread and place a slice of smoked salmon on top and finish with a sprig of dill.

Thai Tuna Curry

Thai Tuna Curry

If you fancy something a bit different this Christmas, we’d recommend making this Thai tuna curry. It’s packed full of flavour and it’s bound to make even the fussiest of guests happy.

Ingredients List

  • 425g Tuna
  • 1 tablespoon of oil
  • 200g of white onions
  • 1 tablespoon of Thai green curry paste
  • A 140ml can of coconut milk
  • 400g of sliced green beans
  • 2 tablespoons of chopped fresh coriander
  • Juice of half a lime

Method

  • 1.Heat the oil in a medium saucepan, add onions and cook for 2-3 minutes.
  • 2.Add curry paste and cook for 1 minute. Stir in coconut milk, green beans and the tuna fish. Then simmer for 2-3 minutes.
  • 3.Stir in coriander and lime juice. Serve curry with cooked jasmine rice.

Oven Roasted Seam Bream with Fennel

Oven Roasted Seam Bream with Fennel

This oven roasted seam bream with fennel will make a great addition to any Christmas feast. It’s simple to make and cost-effective, giving you more time to spend with your loved ones.

Ingredients List

  • A glug of olive oil
  • 1 whole sea bream (about 400g each)
  • 1/2 head of fennel, sliced, with the root removed
  • 1 large potato, washed, skin on and sliced very thin
  • 1/2 small onion
  • 1/2 clove of garlic, sliced thinly
  • 100ml white wine
  • Salt and pepper
  • 1/2 lemon, zested, then sliced
  • 1/2 sprig of thyme
  • 1/2 sprig of rosemary
  • A handful of chopped parsley

Method

  1. Preheat your oven to 180C/Gas4. Add a dash of olive oil to a large oven-proof dish.
  2. Add fennel, sliced potatoes, onion, garlic, wine and 100ml of water.
  3. Season the fish, placing the lemon slices, thyme and rosemary inside it, and lay it in the dish.
  4. Cover the dish with foil, and place in the oven for 15 minutes (if it looks a little dry during the cooking, add a touch more water).
  5. Remove from the oven, and finish with the grated lemon zest and parsley.
